There is something so fun about having breakfast for supper, and something so housewife-ish about making it from scratch! We have these homemade pancakes once every week or so, and I love serving them with pan fried apples. I got this recipe from Allrecipes.com and changed it up a little to fit what we like.
1 ½ cup flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 Tablespoon white sugar
1 ¼ cup almond milk
3 Tablespoons oil
1 teaspoon vanilla
- Combine the dry ingredients in a large bowl.
- Add the milk, egg, and oil, and mix until smooth.
- Pour 1/3 cup of batter onto a lightly oiled griddle and heat over medium high heat.
- Brown the pancakes on both sides and serve hot.
What are your favorite breakfast-for-supper traditions? I’d love to hear about them!
